Ingredients
  

For the Pancakes (Blini):

  • 1 cup all-purpose flour substitute buckwheat flour for authenticity
  • cups whole milk or crème fraîche + milk for richness
  • 2 large eggs separated
  • 3 tbsp melted butter + extra for cooking
  • ½ tsp fine sea salt
  • 1 tbsp fresh chives chopped

For the Toppings:

  • 30 –50g premium caviar Osetra, Beluga, or sustainable farmed
  • ¼ cup crème fraîche or sour cream
  • 1 small red onion minced
  • 1 tbsp fresh dill chopped
  • 1 tbsp capers optional
  • Lemon wedges

Instructions
 

Prepare Batter:

  • Whisk egg yolks, milk, melted butter, and salt. Gradually add flour until smooth.
  • Fold in stiffly beaten egg whites and chives.

Cook Blini:

  • Heat a nonstick skillet. Drop 1 tbsp batter per blini, cooking until golden (1–2 mins/side).

Assemble:

  • Top each blini with crème fraîche, caviar, red onion, dill, and capers. Serve with lemon wedges.
