  • 4 tbsp ghee or butter
  • 1 tsp carom seeds ajwain
  • Water as needed
  • For the Filling:
  • 3 large potatoes boiled & mashed
  • 1 cup peas
  • 1 tbsp oil
  • Jamie’s 7 Secret Spices:
  • Cumin seeds 1 tsp
  • Coriander powder 1.5 tsp
  • Garam masala 1 tsp
  • Amchur 1 tsp
  • Fennel seeds ½ tsp
  • Kashmiri red chili powder ½ tsp
  • Asafoetida a pinch

Instructions
 

  • Make the Dough:
  • Mix flour, ghee, and carom seeds. Add water gradually to form a firm dough. Rest for 20 mins.
  • Prep the Filling:
  • Heat oil, toast cumin and fennel. Add mashed potatoes, peas, and all 7 spices. Cook for 5 mins.
  • Assemble Samosas:
  • Roll dough into thin circles, cut into halves, shape into cones. Fill with 1 tbsp mixture, seal edges.
  • Fry or Bake:
  • Deep-fry until golden (3–4 mins) or air-fry at 375°F for 15 mins.

Notes

  • Freezer-Friendly: Freeze uncooked samosas for up to 3 months.
  • Spice Swap: Too hot? Reduce Kashmiri chili to ¼ tsp.
