Ingredients

  • 1 tsp salt
  • ½ tsp black pepper
  • 4 potato buns toasted

For Baconnaise Sauce:

  • ½ cup mayonnaise
  • 3 tbsp cooked bacon finely chopped
  • 1 tsp smoked paprika
  • 1 tbsp lemon juice

Toppings:

  • 4 slices American cheese
  • ½ cup crispy fried onions
  • Pickle slices

Instructions
 

  • Prep the Skillet: Heat a cast-iron skillet over high heat until smoking hot.
  • Form Patties: Divide beef into 4 equal balls (do NOT press into patties yet).
  • Smash: Place a ball on the skillet. Firmly press with a spatula to flatten into a thin patty. Cook for 2 minutes until edges crisp.
  • Flip & Cheese: Flip patty, top with cheese, and cook 1 more minute.
  • Make Baconnaise: Mix mayo, bacon, paprika, and lemon juice in a bowl.
  • Assemble: Spread Baconnaise on toasted buns. Layer patty, crispy onions, and pickles. Serve immediately!
